Pasta alla carbonara” is one of the most famous Italian dishes from Rome. It is typically made with egg, bacon (pancetta or jowl) and parmesan. But choose compassion over your palate this Christmas and try the vegetarian version! Eating cruelty-free Italian food has never been so easy. All you need to do is swap the the bacon for courgettes! You can also try a different pasta. We tried farfalle.

Ingredients for two people

  • 180g Farfalle pasta (or spaghetti)
  • 200g Courgettes
  • 60g Extra virgin olive oil
  • 100g Pecorino romano cheese
  • Two whole eggs
  • Salt

Method:

  1. Wash and cut the courgettes into small pieces (around 1 cm each)
  2. Heat extra virgin olive oil in a pan and add the courgettes. Then add salt and leave them to fry for about 10 minutes
  3. Put two eggs and some pecorino romano cheese in a bowl and mix together
  4. Cook the pasta in salted boiling water and drain when “al dente
  5. Pour the mixture into the pot with the pasta and let it cook for a few minutes
  6. Put the pasta in a plate with extra parmesan on top and enjoy!
